A complete, cozy meal on one sheet pan. Savory steak bites and crispy potatoes are coated in a rich garlic butter sauce and topped with melted cheese for a quick and satisfying weeknight dinner.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, pepper, and paprika on a sheet pan. Roast for 15 minutes.
  2. Pat steak cubes dry. Sear in a hot skillet for 1-2 minutes per side until browned. Transfer to a plate.
  3. In the same skillet, melt butter over medium heat. Add garlic, thyme, and red pepper flakes. Cook for 60-90 seconds until fragrant. Remove from heat.
  4. Remove potatoes from oven. Scatter steak bites over potatoes. Pour garlic butter sauce over everything and toss to coat.
  5. Sprinkle mozzarella and Parmesan cheese evenly over the top.
  6. Return sheet pan to oven and bake for 8-10 minutes, until cheese is melted and bubbly and steak is cooked to desired doneness.
  7. Garnish with fresh parsley and serve.

Notes

Pat steak dry for a good sear. Do not overcrowd the skillet. Par-cooking the potatoes ensures everything finishes together. Leftovers reheat well in a skillet or under the broiler.
