This easy one-pan dinner features juicy chicken breasts baked with sweet cherry tomatoes and topped with melted fresh mozzarella and basil. It's a simple, flavorful meal that's perfect for a quick weeknight dinner yet elegant enough for company.

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 lbs total)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 pint cherry or grape tomatoes
  • 8 ounces fresh mozzarella cheese, sliced into 1/4-inch rounds
  • 1/4 cup fresh basil leaves, thinly sliced
  • 2 tablespoons balsamic glaze, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken breasts dry with paper towels. Drizzle a large baking sheet or oven-safe skillet with 1 tablespoon olive oil.
  2. In a small bowl, mix oregano, garlic powder, onion powder, salt, and pepper. Place chicken on the oiled pan. Drizzle with remaining 1 tablespoon olive oil and rub over chicken. Sprinkle seasoning mix evenly over both sides of chicken.
  3. Arrange cherry tomatoes around the chicken on the pan. Bake for 20 minutes, or until chicken is nearly cooked through (about 155-160°F internally).
  4. Remove pan from oven. Top each chicken breast with slices of fresh mozzarella. Return to oven and bake for an additional 5-7 minutes, until cheese is melted and bubbly and chicken reaches 165°F internally.
  5. Remove pan from oven. Scatter fresh basil over everything. Drizzle with balsamic glaze before serving, if desired.

Notes

For best results, pat chicken dry before seasoning and use an instant-read thermometer. Let mozzarella sit at room temp before slicing for better melting. Add fresh basil only after baking. Leftovers store well in the fridge for 3-4 days.
