These Buffalo Chicken Sliders are the ultimate game day or party appetizer. Using a rotisserie chicken makes them quick and easy, delivering all the tangy, spicy flavor of buffalo wings in a neat, handheld package. They are saucy, cheesy, and guaranteed to disappear fast.

Ingredients

  • 1 whole rotisserie chicken, skin removed, meat shredded (about 4 cups)
  • 1/2 cup buffalo sauce (like Frank's RedHot)
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup ranch or blue cheese dressing, plus more for serving
  • 12 slider buns (like King's Hawaiian or potato rolls)
  • 6 slices provolone or mozzarella cheese, cut in half
  • 1/2 cup shredded Monterey Jack or cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley or chives (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, buffalo sauce, melted butter, and 1/2 cup dressing. Mix until chicken is evenly coated.
  3. Slice the entire package of slider buns in half horizontally. Place the bottom halves in a baking dish or on a sheet pan.
  4. Spread the buffalo chicken mixture evenly over the bottom buns.
  5. Layer the halved cheese slices over the chicken. Sprinkle with optional shredded cheese if using.
  6. Place the top bun halves over the cheese. Cover the dish loosely with aluminum foil.
  7. Bake for about 10 minutes, or until cheese is melted and buns are warm.
  8. Remove from oven, uncover, and garnish with chopped parsley or chives. Slice into individual sliders and serve immediately with extra dressing.

Notes

For a lighter version, use light butter and dressing. Gluten-free buns work well. Assemble ahead and refrigerate for up to 8 hours before baking; add 5-10 minutes to bake time if cold.
