This creamy, tangy, and spicy Buffalo chicken dip is the ultimate crowd-pleasing appetizer. It's incredibly simple to make with rotisserie chicken and bakes to bubbly perfection. Perfect for game days, parties, or a delicious snack.

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup Buffalo-style hot sauce (like Frank's RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or similar oven-safe dish.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, ranch dressing, and Buffalo hot sauce. Beat with a hand mixer or stir vigorously with a spoon until smooth and creamy.
  3. Add the shredded chicken, 1 cup of the shredded cheddar cheese (reserve the remaining 1/2 cup Monterey Jack for topping), garlic powder, onion powder, salt, and pepper. Gently fold everything together until the chicken is evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread into an even layer. Sprinkle the reserved 1/2 cup of Monterey Jack cheese evenly over the top.
  5. Bake for 20-25 minutes, or until the edges are bubbling and the cheese on top is melted and lightly golden.
  6. Remove from oven and let the dip rest for 5-10 minutes before serving. This allows it to set slightly for easier scooping.

Notes

For a smoother dip, ensure cream cheese is fully softened. You can use blue cheese dressing instead of ranch for a more traditional flavor. The dip can be assembled a day ahead, covered, and refrigerated before baking; add a few extra minutes to the bake time. Leftovers reheat well in the oven.
