  • 1 tablespoon olive oil
  • 1 pound lean ground beef (90/10)
  • 1 medium yellow onion, diced
  • 1 bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 packet (about 2 tablespoons) taco seasoning
  • 1 cup beef broth or water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • 1 cup frozen corn kernels
  • 1 cup shredded cheddar or Mexican blend cheese
  • For serving: shredded lettuce, diced avocado, sour cream, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon, and cook until no longer pink, about 5-7 minutes.
  2. Push beef to the side. Add diced onion and bell pepper to the empty space and sauté for 3-4 minutes until softening. Add minced garlic and cook for 30 seconds until fragrant, then stir everything together.
  3. Sprinkle taco seasoning over the mixture and stir to coat. Pour in beef broth to deglaze the pan, scraping up browned bits.
  4. Add the undrained tomatoes, drained black beans, and frozen corn. Stir well, bring to a simmer, then reduce heat to medium-low. Let bubble gently for 5-7 minutes to meld flavors and thicken slightly.
  5. Turn off the heat. Sprinkle shredded cheese evenly over the top. Cover the skillet with a lid for 2-3 minutes to let the residual heat melt the cheese.
  6. Serve hot with desired toppings like shredded lettuce, avocado, sour cream, cilantro, and lime wedges.

Notes

For a lighter option, use ground turkey or chicken. Ensure taco seasoning is gluten-free if needed. The dish freezes well for up to 3 months. Do not add the cheese until the heat is off to prevent it from becoming greasy.
