This better-than-takeout stir fry is a weeknight hero, ready in under 30 minutes. The secret is a hot pan and prepping everything ahead for perfectly seared beef and crisp-tender broccoli coated in a rich, glossy sauce.

  • 1 1/2 pounds flank steak or sirloin, sliced thinly against the grain
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon cooking oil
  • 1 teaspoon sesame oil
  • 1/2 cup low-sodium beef broth
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons fresh ginger, grated
  • 3-4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 large head broccoli, cut into florets
  • 1 medium onion, sliced
  • 2-3 tablespoons cooking oil, divided
  • Sesame seeds and sliced green onions, for garnish

Instructions

  1. Slice the steak thinly against the grain. In a bowl, toss with 3 tbsp soy sauce, 1 tbsp cornstarch, 1 tbsp cooking oil, and sesame oil. Marinate for 10-15 minutes.
  2. In another bowl, whisk together beef broth, 1/3 cup soy sauce, honey, oyster sauce, vinegar, ginger, garlic, and 1 tbsp cornstarch until smooth. Set aside.
  3. Heat a large wok or skillet over medium-high heat. Add 1 tbsp oil. Stir-fry broccoli for 3-4 minutes until bright green and crisp-tender. Remove to a plate.
  4. Add another 1 tbsp oil to the hot pan. Add beef in a single layer and sear undisturbed for 60-90 seconds per side until just cooked. Remove to the plate with broccoli.
  5. Re-whisk sauce and pour into the hot pan. Cook for about 1 minute until bubbling and thickened.
  6. Return beef, broccoli, and any juices to the pan. Toss to coat in the sauce and heat through for 1 minute.
  7. Serve immediately over rice, garnished with green onions and sesame seeds.

Notes

Do not crowd the pan when cooking the beef; cook in batches if needed. Have all ingredients prepped before starting to cook. For gluten-free, use tamari. For lower-carb, serve over cauliflower rice.
