These BBQ Chicken Stuffed Sweet Potatoes combine tender sweet potatoes with smoky shredded chicken, melted cheese, and cool sour cream. This easy weeknight meal is a family favorite that comes together in under an hour with simple ingredients.

  • 4 medium sweet potatoes, scrubbed clean
  • 2 cups cooked shredded chicken
  • 1 cup your favorite barbecue sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions, plus more for garnish
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F. Scrub sweet potatoes, pat dry, and poke each with a fork several times. Rub with olive oil and a pinch of salt. Place directly on oven rack or on a lined baking sheet. Bake for 40 to 50 minutes until tender.
  2. While potatoes bake, combine shredded chicken with 3/4 cup barbecue sauce in a small saucepan. Warm over medium heat, stirring occasionally, until heated through and coated. Add more sauce if desired.
  3. Once potatoes are tender, let cool a few minutes. Slice each open lengthwise and fluff insides with a fork. Divide BBQ chicken mixture evenly among potatoes. Top with shredded cheese.
  4. Return potatoes to oven for 5 to 7 minutes until cheese melts and bubbles.
  5. Remove from oven. Top each with a dollop of sour cream or Greek yogurt and sprinkle with green onions. Serve warm.

Notes

For a faster option, microwave sweet potatoes for 5 to 7 minutes instead of baking. To make dairy free, skip cheese and sour cream and top with avocado slices and tahini. Leftovers keep in the fridge for up to 4 days.
