This sandwich is the ultimate comfort food, combining tangy barbecue chicken with gooey melted cheese between crispy, golden bread. It's a quick and satisfying meal that feels like a treat, perfect for using up leftover chicken. The double-cheese method guarantees an epic, stretchy cheese pull in every bite.

  • 2 cups cooked, shredded chicken
  • 1/2 cup barbecue sauce, plus extra for brushing
  • 1 1/2 cups shredded cheese blend (like cheddar and mozzarella)
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro or parsley (optional)
  • 8 slices sturdy bread (like sourdough or whole grain)
  • 4 tablespoons softened butter
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. In a medium bowl, mix the shredded chicken, 1/2 cup barbecue sauce, red onion, and fresh herbs (if using) until the chicken is evenly coated.
  2. Spread a thin layer of softened butter on one side of each bread slice. If desired, mix garlic powder into the butter before spreading.
  3. Place 4 bread slices buttered-side down on a cutting board. On each, layer a handful of cheese, then divide the chicken mixture evenly, pressing it down slightly. Top the chicken with another handful of cheese.
  4. Place the remaining bread slices on top, buttered-side up, to complete the sandwiches.
  5. Heat a large skillet or griddle over medium-low heat. Carefully place the sandwiches in the skillet.
  6. Cook for 4-6 minutes until the bottom is deep golden brown. Do not press down with a spatula.
  7. Gently flip each sandwich and cook for another 4-6 minutes until the second side is golden and cheese is oozing. Optionally, brush the tops with extra barbecue sauce in the last minute.
  8. Transfer sandwiches to a cutting board and let rest for 1-2 minutes before slicing and serving.

Notes

For the best melt, shred cheese from a block instead of using pre-shredded. Cook on medium-low heat to avoid burning the bread before the cheese melts. Letting the sandwich rest briefly before cutting helps the cheese set for a cleaner pull.
