This viral sensation is a cozy, flavor-packed weeknight dinner hero. A block of feta and cherry tomatoes roast together to create a luscious, creamy sauce that coats pasta perfectly. It's minimal effort for maximum comfort food results.

Ingredients

Scale
  • 1 block (8 oz) feta cheese
  • 2 pints cherry or grape tomatoes
  • 1/2 cup extra virgin olive oil
  • 4-5 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 10 oz pasta (orecchiette, penne, or rigatoni)
  • 1/3 cup reserved pasta water
  • Fresh basil, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe baking dish, combine tomatoes and minced garlic. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, black pepper, and salt. Toss to coat.
  3. Place the feta block in the center of the tomatoes. Drizzle with a little more oil and crack extra black pepper on top.
  4. Bake for 30-35 minutes until tomatoes burst and feta is soft and golden.
  5. While baking, cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
  6. Carefully remove hot dish from oven. Use a fork to smash the roasted tomatoes and feta together into a creamy sauce.
  7. Add the drained hot pasta and a splash of reserved pasta water to the dish. Toss vigorously until pasta is well coated.
  8. Garnish with torn fresh basil and serve immediately.

Notes

Do not skip reserving the starchy pasta water; it's essential for a silky sauce. For a heartier meal, add cooked chickpeas or shredded chicken after baking. The dish can be made gluten-free by using gluten-free pasta.
