This overnight French toast bake transforms simple ingredients into a luxurious, stress-free breakfast. Cream cheese and blueberries create rich, fruity pockets in a custardy base, all topped with a buttery cinnamon crumble. Perfect for weekend brunches or special mornings.

Ingredients

Scale
  • 1 (12-16 oz) loaf day-old French bread, brioche, or challah, cut into 1-inch cubes
  • 8 oz cream cheese, softened and cut into ½-inch cubes
  • 1 ½ cups fresh or frozen blueberries
  • 6 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup all-purpose flour
  • ¼ cup packed brown sugar
  • ¼ cup cold unsalted butter, cubed
  • ¼ teaspoon cinnamon

Instructions

  1. Grease a 9x13 inch baking dish with butter or non-stick spray.
  2. Spread half of the bread cubes in the dish. Scatter cream cheese cubes and blueberries evenly over the bread. Top with remaining bread cubes.
  3. In a large bowl, whisk eggs, milk, cream, granulated sugar, vanilla, 1 tsp cinnamon, and salt until smooth.
  4. Pour custard evenly over the bread layers. Press down gently with a spatula to ensure all bread is soaked. Cover tightly with plastic wrap and refrigerate for at least 8 hours.
  5. In a small bowl, mix flour, brown sugar, and ¼ tsp cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Store in fridge.
  6. Preheat oven to 350°F (175°C). Uncover dish and let sit at room temperature while oven heats. Sprinkle crumb topping evenly over the top.
  7. Bake for 45-55 minutes, until top is golden brown and center is set. Tent with foil if top browns too quickly.
  8. Let rest for 10 minutes before serving.

Notes

Use day-old or slightly stale bread for best texture. Do not skip the 8-hour soak. For a lemon twist, add zest of one lemon to the custard. Leftovers reheat well. For a dairy-free version, use plant-based milk, cream, and cream cheese.
