Bring the iconic flavors of Alien Fresh Jerky to your kitchen with this homemade version. Savory, slightly sweet, and totally addictive, this beef jerky is perfect for road trips, hiking, or anytime you need a high-protein snack.

Ingredients

  • 2 lbs lean beef (such as top round or flank steak), thinly sliced against the grain
  • ½ cup soy sauce (or tamari for gluten-free)
  • ¼ cup Worcestershire sauce
  • 3 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
  • 2 tbsp liquid smoke
  • 1 tbsp apple cider vinegar

Instructions

  1. Place beef in freezer for 30-45 minutes to firm up, then slice into ¼-inch thick strips against the grain
  2. Whisk together soy sauce, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, cayenne, liquid smoke, and apple cider vinegar to create marinade
  3. Place beef strips in resealable bag or dish, pour marinade over, massage to coat, and refrigerate for at least 4 hours or overnight
  4. Preheat oven or dehydrator to 165°F (74°C), arrange beef strips in single layer on wire racks, and bake/dehydrate for 4-6 hours, flipping halfway through
  5. Remove jerky from heat and let cool completely on rack before storing in airtight container

Notes

For gluten-free version, use tamari instead of soy sauce. Partially freezing the meat makes slicing easier. Jerky should be dry but still slightly pliable when done. Store in airtight container at room temperature for up to 2 weeks.
