This is the ultimate quick-fix snack. Pre-sliced mini peppers are stuffed with a creamy, savory three-cheese blend, creating a satisfying bite packed with protein and flavor in just minutes. Enjoy them cold for instant gratification or broiled for a warm, melty treat.

Ingredients

Scale
  • 1 (8-ounce) package pre-sliced mini sweet peppers (about 12-15 peppers)
  • 4 ounces cream cheese, softened to room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (or regular paprika)
  • Pinch of salt and black pepper
  • Optional for garnish: fresh chopped chives, everything bagel seasoning, or a drizzle of hot honey

Instructions

  1. Arrange the pre-sliced mini peppers on a plate or a small baking sheet if you plan to broil them.
  2. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, grated Parmesan, garlic powder, smoked paprika, salt, and pepper. Mix until smooth and well combined.
  3. Taste the cheese mixture and adjust seasoning if desired.
  4. Using a small spoon or butter knife, generously fill each mini pepper half with the cheese mixture, mounding it slightly.
  5. For a no-bake snack: Garnish as desired and serve immediately.
  6. For a warm, melty version: Preheat your broiler on high. Place stuffed peppers on a baking sheet and broil for 3-5 minutes, watching closely, until the cheese is golden and bubbling. Let cool for a minute before serving.

Notes

Let cream cheese soften for easy mixing. The filling can be made up to 2 days ahead. For a higher-protein version, blend low-fat cottage cheese with the seasonings as a cream cheese substitute.
