This homemade grilled chicken marinade is my secret weapon for turning ordinary chicken into a show-stopping main course. It’s a simple blend of pantry staples that work in harmony to tenderize the meat deeply and infuse it with a symphony of savory, tangy, and herbaceous notes.


Ingredients

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 2 pounds chicken breasts or thighs

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, Dijon mustard, honey, minced garlic, dried herbs, and black pepper until the mixture is well combined and slightly thickened.
  2. Place your chicken breasts or thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring every piece is thoroughly coated. Seal the bag or cover the dish.
  3. Refrigerate for at least 30 minutes. For the most flavorful and juicy grilled chicken, let it marinate for 2 to 4 hours.
  4. Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Discard the used marinade.
  5. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing to allow the juices to redistribute throughout the meat.

Notes

For a gluten-free version, use tamari or coconut aminos instead of soy sauce. You can substitute maple syrup for honey. The marinade can be mixed and stored in the refrigerator for up to 3 days before using. Never reuse marinade that has contained raw chicken.
