- 1.5 lbs stewing beef, cubed
- 3 tbsp olive oil
- 1/4 cup all-purpose flour
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 1.5 lbs potatoes, cubed
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup frozen peas
- Salt and black pepper to taste
- Mozzarella pearls, sliced black olives, fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then toss in flour. Brown beef in batches and set aside.
- In the same pot, sauté onion, carrots, and celery for 5-7 minutes. Add garlic and cook for 1 minute more.
- Stir in tomato paste and cook for 1 minute.
- Return beef to the pot. Add diced tomatoes, broth, thyme, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
- Add potatoes, cover, and simmer for another 30-40 minutes until tender.
- Stir in frozen peas and cook for 2 more minutes. Discard bay leaf.
- Serve in bowls and garnish with mozzarella “eyeballs,” olive “spiders,” and fresh parsley.
Notes
Stews often taste even better the next day! Make ahead up to 2 days in advance. Freezes beautifully for up to 3 months. For vegetarian version, use mushrooms instead of beef and vegetable broth.
