Description

A hearty and playful stew perfect for your Halloween feast, featuring tender beef, vegetables, and fun spooky garnishes.


Ingredients

  • 1.5 lbs stewing beef, cubed
  • 3 tbsp olive oil
  • 1/4 cup all-purpose flour
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1.5 lbs potatoes, cubed
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Mozzarella pearls, sliced black olives, fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then toss in flour. Brown beef in batches and set aside.
  2. In the same pot, sauté onion, carrots, and celery for 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Stir in tomato paste and cook for 1 minute.
  4. Return beef to the pot. Add diced tomatoes, broth, thyme, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
  5. Add potatoes, cover, and simmer for another 30-40 minutes until tender.
  6. Stir in frozen peas and cook for 2 more minutes. Discard bay leaf.
  7. Serve in bowls and garnish with mozzarella “eyeballs,” olive “spiders,” and fresh parsley.

Notes

Stews often taste even better the next day! Make ahead up to 2 days in advance. Freezes beautifully for up to 3 months. For vegetarian version, use mushrooms instead of beef and vegetable broth.
