Slow Cooker Beef & Cheddar Sandwiches are the culinary equivalent of a warm hug on a busy day. Tender shredded beef cooks all day in your crock pot, then gets piled onto toasted buns with melty sharp cheddar cheese for the ultimate comfort food sandwich that requires minimal effort.
Ingredients
- Beef Chuck Roast (3-4 pounds)
- Beef Broth (1 cup)
- Onion (1 large), thinly sliced
- Worcestershire Sauce (2 tablespoons)
- Garlic Powder (1 teaspoon)
- Onion Powder (1 teaspoon)
- Salt and Black Pepper (to taste)
- Hoagie Rolls or Buns (6-8)
- Sliced Sharp Cheddar Cheese (8-12 slices)
Instructions
- Pat the beef chuck roast dry with paper towels. Season all over generously with salt, black pepper, garlic powder, and onion powder.
- Place the thinly sliced onion in the bottom of your slow cooker. Set the seasoned roast on top of the onions. Pour the beef broth and Worcestershire sauce around the roast.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The beef is done when it is fork-tender and shreds easily.
- Carefully remove the beef from the slow cooker and place it on a large cutting board. Using two forks, shred the meat completely. You can skim any excess fat from the cooking liquid in the slow cooker.
- Return the shredded beef to the slow cooker and toss it with the juices. Let it sit for 10-15 minutes to soak up all that flavor.
- Preheat your oven’s broiler. Slice your hoagie rolls open and place them on a baking sheet. Pile a generous amount of the hot shredded beef onto each roll, then top with 1-2 slices of cheddar cheese. Broil for 1-2 minutes, watching closely, until the cheese is melted and bubbly and the edges of the buns are toasted. Serve immediately with a small bowl of the cooking liquid for dipping.
Notes
For an extra flavor boost, you can quickly sear the seasoned roast in a hot skillet with a little oil before placing it in the slow cooker. This step adds a deeper, caramelized flavor to the final dish. Store leftover shredded beef (without the buns and cheese) in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
