Description

A hearty, cheesy, and satisfying family favorite that comes together with simple pantry ingredients in just 45 minutes—perfect for busy weeknights.

Ingredients

Scale
  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, plus ½ cup for topping
  • 1 (16 oz) bag frozen tater tots
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Your Kitchen: Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Brown the Meat: In a large skillet over medium heat, brown the ground beef until no pink remains (about 5-7 minutes). Drain excess fat.
  3. Add Aromatics and Seasonings: Add diced onion and cook until translucent (3 minutes). Add garlic and cook 30 seconds.
  4. Create the Creamy Base: Add soup, Worcestershire sauce, oregano, salt, and pepper. Stir until combined. Remove from heat and fold in sour cream.
  5. Layer the Casserole: Spread meat mixture in baking dish. Top with frozen vegetables, 1 cup cheese, and layer frozen tater tots evenly on top.
  6. Bake to Perfection: Bake uncovered for 25 minutes. Add remaining ½ cup cheese and bake 5 more minutes until golden and bubbly.
  7. Rest and Serve: Let rest for 5 minutes. Garnish with parsley if desired and serve warm.

Notes

Swap ground beef for turkey, or use cream of chicken soup instead of mushroom. To make dairy-free, use plant-based cheese and yogurt. Customize veggies based on what you have!
