Description

Sheet Pan Sausage and Sweet Potatoes with Honey Garlic Sauce is the perfect quick weeknight dinner—savory sausage, caramelized sweet potatoes, and colorful veggies tossed in a sticky-sweet honey garlic glaze. One pan, 35 minutes, and minimal cleanup!


Ingredients

  • 1 pound Italian sausage links (sweet or hot)
  • 2 large sweet potatoes, cubed into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 2 bell peppers (any color), sliced
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • For the honey garlic sauce:
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment or foil.
  2. Toss sweet potato cubes with 2 tbsp olive oil, salt, pepper, and Italian seasoning. Spread on the sheet pan and roast 10 minutes.
  3. Add sausage (cut into 2-inch pieces), onion, and bell peppers. Drizzle with 1 tbsp olive oil and toss. Roast 15 minutes.
  4. Meanwhile, whisk together honey, garlic, soy sauce, vinegar, and red pepper flakes.
  5. Drizzle sauce over sausage and veggies, toss, and roast an additional 3–5 minutes until caramelized.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

Swap pork sausage for turkey, chicken, or plant-based sausage. Use regular potatoes instead of sweet potatoes, adjusting size for even cooking. Leftovers make excellent meal prep bowls over rice or quinoa.
