- 1 pound Italian sausage links (sweet or hot)
- 2 large sweet potatoes, cubed into 1-inch pieces
- 1 large red onion, cut into wedges
- 2 bell peppers (any color), sliced
- 3 tablespoons olive oil
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- For the honey garlic sauce:
- 3 tablespoons honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a sheet pan with parchment or foil.
- Toss sweet potato cubes with 2 tbsp olive oil, salt, pepper, and Italian seasoning. Spread on the sheet pan and roast 10 minutes.
- Add sausage (cut into 2-inch pieces), onion, and bell peppers. Drizzle with 1 tbsp olive oil and toss. Roast 15 minutes.
- Meanwhile, whisk together honey, garlic, soy sauce, vinegar, and red pepper flakes.
- Drizzle sauce over sausage and veggies, toss, and roast an additional 3–5 minutes until caramelized.
- Serve hot, garnished with fresh parsley if desired.
Notes
Swap pork sausage for turkey, chicken, or plant-based sausage. Use regular potatoes instead of sweet potatoes, adjusting size for even cooking. Leftovers make excellent meal prep bowls over rice or quinoa.
