- 1 pound smoked sausage or kielbasa, sliced into ½-inch rounds
- 2 medium sweet potatoes (about 1.5 lbs), peeled and cubed into 1-inch pieces
- 1 large red onion, cut into chunks
- 1 tablespoon olive oil
- Salt and black pepper to taste
- ¼ cup honey
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 3 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon smoked paprika (optional)
- Pinch of red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Toss sausage, sweet potatoes, and onion on baking sheet with olive oil, salt, and pepper.
- Roast for 15 minutes.
- Whisk together honey, soy sauce, garlic, vinegar, mustard, and optional spices.
- Remove pan from oven, pour sauce over everything, and toss to coat.
- Return to oven and roast for another 10-15 minutes until sweet potatoes are tender and sauce is glazed.
- Let rest 2 minutes before serving. Garnish with parsley if desired.
Notes
For extra crispiness, broil for final 1-2 minutes. Store leftovers in airtight container for up to 4 days. Freezes well for up to 3 months.
