Description

Ingredients

  • 1 pound smoked sausage or kielbasa, sliced into ½-inch rounds
  • 2 medium sweet potatoes (about 1.5 lbs), peeled and cubed into 1-inch pieces
  • 1 large red onion, cut into chunks
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • ¼ cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss sausage, sweet potatoes, and onion on baking sheet with olive oil, salt, and pepper.
  2. Roast for 15 minutes.
  3. Whisk together honey, soy sauce, garlic, vinegar, mustard, and optional spices.
  4. Remove pan from oven, pour sauce over everything, and toss to coat.
  5. Return to oven and roast for another 10-15 minutes until sweet potatoes are tender and sauce is glazed.
  6. Let rest 2 minutes before serving. Garnish with parsley if desired.

Notes

For extra crispiness, broil for final 1-2 minutes. Store leftovers in airtight container for up to 4 days. Freezes well for up to 3 months.
