Description

A creamy, aromatic butter chicken recipe simplified for busy weeknights without losing authentic flavor.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) tomato sauce
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 2 tablespoons honey or sugar
  • Salt to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Marinate the Chicken: Combine all marinade ingredients in a bowl and coat chicken evenly. Marinate for at least 15 minutes.
  2. Start the Sauce: In a skillet, melt butter and sauté onions until translucent. Add garlic and ginger and cook briefly.
  3. Add the Spices: Stir in garam masala, cumin, coriander, and cayenne. Toast briefly.
  4. Create the Base Sauce: Add tomato sauce and paste, simmer 5 minutes.
  5. Cook the Chicken: Add chicken and marinade, simmer until cooked through.
  6. Finish with Cream: Stir in cream and honey. Simmer gently 2-3 minutes. Adjust seasoning.
  7. Serve: Garnish with cilantro and serve hot with rice or naan.

Notes

Avoid boiling after adding cream to prevent curdling. Taste improves after resting overnight.
