Description

A fluffy, single-serve protein powder mug cake made in just 5 minutes. Perfect for breakfast, snack, or post-workout fuel with no flour and no banana.


Ingredients

  • 1 scoop protein powder (any flavor)
  • ½ tsp baking powder
  • 2 tsp unsweetened cocoa powder (optional)
  • 12 tsp sweetener of choice (optional)
  • 1 large egg (or flax egg for vegan)
  • 12 tbsp water or milk (to adjust consistency)
  • Toppings: nut butter, Greek yogurt, fruit, etc.

Instructions

  1. Prepare your mug: Use a 14–16 oz microwave-safe mug to give the cake room to rise and prevent overflow. Lightly spray or grease if desired.
  2. Mix the dry ingredients: Add 1 scoop of protein powder, ½ tsp baking powder, and 2 tsp unsweetened cocoa powder (optional) directly into the mug. Stir with a fork to combine evenly.
  3. Add sweetener (optional): Mix in 1–2 tsp of your preferred zero-calorie or natural sweetener to boost flavor if your protein powder is unsweetened.
  4. Incorporate the egg: Crack 1 large egg (or use a flax egg for a vegan option) into the mug and mix thoroughly until a smooth batter forms. Avoid overmixing.
  5. Adjust the consistency: Add 1–2 tbsp of water, almond milk, oat milk, or regular milk to loosen the batter. Stir until smooth but not runny. The batter should be thick but pourable.
  6. Microwave carefully: Microwave on high for 30 seconds. If the top is still wet, continue microwaving in 5-second increments until the cake is just set. Do not overcook, or it may turn rubbery.
  7. Rest and top: Let the cake rest in the mug for 30 seconds. This allows the structure to settle and prevents burning your mouth. Add desired toppings like nut butter, fresh berries, or Greek yogurt.
  8. Enjoy warm: Your protein mug cake is ready to eat straight from the mug. Grab a spoon and dig in!

Notes
