This Meaty Texas Trash Dip is the ultimate party appetizer loaded with savory ground beef, creamy cheese, and a little kick. It’s an easy layered dip that looks impressive but comes together with simple ingredients.

- 1 pound ground beef (80/20 blend is ideal for flavor)
- 1 (8-ounce) package cream cheese, softened
- 1 (16-ounce) container sour cream
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), undrained
- 1 (1-ounce) packet taco seasoning
- 2 cups shredded Colby Jack cheese, divided
- 1 (16-ounce) can refried beans
- 1/2 cup sliced black olives (optional)
- 1/4 cup sliced green onions
Instructions
- Preheat your oven to 350°F (175°C). In a large oven-safe skillet over medium-high heat, cook the ground beef until it’s no longer pink, breaking it up with a spoon as it cooks. Drain off any excess grease.
- Reduce the heat to low. Add the softened cream cheese, sour cream, undrained diced tomatoes with green chilies, and the taco seasoning packet to the skillet with the beef. Stir continuously until the cream cheese is fully melted and the mixture is smooth and well combined.
- Spread the refried beans in an even layer on the bottom of a 9×13-inch baking dish (or keep it in your oven-safe skillet if it’s large enough). Pour the creamy meat mixture over the top of the beans and spread it evenly.
- Sprinkle 1 1/2 cups of the shredded Colby Jack cheese over the top. Scatter the sliced black olives if you’re using them.
- Bake for 20-25 minutes, or until the cheese is completely melted and the edges are bubbly.
- Remove the dip from the oven and immediately sprinkle with the remaining 1/2 cup of cheese and the sliced green onions. Let it sit for 5 minutes before serving.
Notes
For an extra-golden, slightly crispy cheese top, you can pop the skillet under the broiler for the last 1-2 minutes of cooking. Watch it closely so it doesn’t burn! Letting the dip rest for 5 minutes after baking allows it to set slightly so it’s dippable, not soupy.
