- 1 ripe banana
- 1/2 cup plain Greek yogurt
- 3 large eggs
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 tbsp coconut oil
- 2/3 cup milk (any kind)
- 1 tbsp maple syrup
Instructions
- Add all ingredients to a high-powered blender.
- Blend until smooth, about 30–45 seconds.
- Let the batter sit for 5 minutes to thicken.
- Preheat waffle maker and lightly grease if needed.
- Pour batter into the center and cook until golden brown.
- Serve warm with banana slices, nut butter, and chocolate chips.
Notes
For crispier waffles, cook an extra 1–2 minutes. You can freeze leftovers and reheat in a toaster or air fryer!
