A quick and easy Kodiak Cakes pancake recipe baked in a sheet pan perfect for meal prep, busy mornings, or feeding a crowd.

- 2½ cups Kodiak pancake mix
- 2 large eggs
- 2 cups milk (dairy or non-dairy)
- 1 tbsp melted butter or neutral oil
- Optional: 1 tsp cinnamon or ½ tsp vanilla extract
- Toppings: I used strawberries, blueberries, and chocolate chips
Instructions
- Preheat oven to 425°F and grease a 13×18-inch sheet pan.
- In a large bowl, whisk together Kodiak mix, eggs, milk, and optional cinnamon or vanilla.
- Pour batter into prepared pan and spread evenly with a spatula.
- Sprinkle toppings across the surface as desired.
- Bake for 12–14 minutes or until the top is golden and a toothpick inserted comes out clean.
- Let cool slightly, slice into squares, and serve or store for later.
Notes
Use parchment paper for easy cleanup. Section toppings by area to cater to picky eaters. Stores in fridge up to 4 days or freezer for 3 months.
