Instructions
- Prep and Preheat: Start by preheating your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or give it a light coating of oil.
- Mix the Wet Ingredients: In a large bowl, mash the ripe bananas with a fork until mostly smooth. Whisk in the eggs, almond butter, maple syrup, and vanilla extract until the mixture is well combined and creamy.
- Combine the Dry Ingredients: In a separate, medium-sized bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt.
- Bring It All Together: Pour the dry ingredients into the wet ingredients. Gently fold everything together with a spatula until just combined. Be careful not to overmix! If you’re using add-ins like chocolate chips, fold them in now.

Notes
This bread freezes beautifully! Wrap individual slices or the whole loaf tightly in plastic wrap and then in foil. Store in a freezer bag for up to 3 months. Thaw at room temperature or pop a frozen slice straight into the toaster.
