Description

This High Protein Delicious Banana Bread is the ultimate healthy snack, packing a serious protein punch without sacrificing an ounce of the moist, tender crumb and sweet banana goodness we all crave. Perfect for fitness enthusiasts, busy parents, or anyone looking for a more nourishing treat.

Ingredients

Scale
  • 3 large, very ripe bananas
  • 2 large eggs
  • 1/3 cup creamy almond butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour
  • 1/2 cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (optional): dark chocolate chips or chopped walnuts

Instructions

  1. Prep and Preheat: Start by preheating your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or give it a light coating of oil.
  2. Mix the Wet Ingredients: In a large bowl, mash the ripe bananas with a fork until mostly smooth. Whisk in the eggs, almond butter, maple syrup, and vanilla extract until the mixture is well combined and creamy.
  3. Combine the Dry Ingredients: In a separate, medium-sized bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt.
  4. Bring It All Together: Pour the dry ingredients into the wet ingredients. Gently fold everything together with a spatula until just combined. Be careful not to overmix! If you’re using add-ins like chocolate chips, fold them in now.
  5. Bake to Perfection: Pour the batter into your prepared loaf pan and smooth the top with the spatula. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Cool Completely: Let the bread cool in the pan for at least 15-20 minutes before transferring it to a wire rack to cool completely.

Notes

This bread freezes beautifully! Wrap individual slices or the whole loaf tightly in plastic wrap and then in foil. Store in a freezer bag for up to 3 months. Thaw at room temperature or pop a frozen slice straight into the toaster.
