  • 4 large low-carb tortillas (8-inch size)
  • 1 ½ cups shredded Mexican blend cheese
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or avocado oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Optional: ¼ cup diced bell peppers, 1 jalapeño (seeded and minced), 2 tbsp fresh cilantro, sour cream or Greek yogurt for serving

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until softened.
  2. Add ground beef, breaking it up with a spatula as it browns. Cook for 5-6 minutes until nearly cooked through.
  3. Add minced garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 2 minutes until fragrant. Drain excess grease.
  4. Lay tortilla flat. Sprinkle cheese on one half, add beef mixture, then more cheese. Fold tortilla over.
  5. Cook quesadilla in skillet over medium heat for 2-3 minutes per side until golden brown and crispy.
