Description

  • 2 cans (15 ounces each) whole kernel corn, drained
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 can (4.5 ounces) diced green chiles, undrained
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Combine the Base: In a large mixing bowl, add the drained corn, mayonnaise, and sour cream. Stir until everything is well combined and creamy.
  2. Add Flavor: To the same bowl, add the shredded cheddar cheese, diced green chiles (with their juices), red onion, cilantro, garlic powder, chili powder, cumin, and black pepper.
  3. Mix and Season: Stir all ingredients thoroughly until the cheese and spices are evenly distributed throughout the dip. Squeeze in the fresh lime juice and stir again.
  4. Taste and Adjust: Taste your dip and add salt as needed. The amount will depend on the saltiness of your mayonnaise and cheese. Give it one final stir.
  5. Chill or Bake: For a cold corn dip, cover the bowl and refrigerate for at least 30 minutes before serving. For a hot corn dip, transfer the mixture to a greased baking dish and bake at 350°F (175°C) for 25-30 minutes, or until bubbly and lightly golden on top.

Notes

For best flavor, let the cold dip chill for at least 30 minutes before serving. You can make this dip a day ahead. Do not freeze as the dairy will separate. For a lighter version, use Greek yogurt instead of sour cream and light mayonnaise.
