Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons chipotle ranch seasoning (store-bought or homemade)
  • 4 large flour tortillas (10-inch)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican-blend cheese
  • 1/2 cup sour cream
  • 1 avocado, sliced
  • 1/2 cup pico de gallo
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Homemade Chipotle Ranch Seasoning:

  • 2 tablespoons ranch seasoning mix
  • 1 tablespoon chipotle powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Mix olive oil and chipotle ranch seasoning in a bowl. Coat chicken thoroughly and marinate for 30 minutes (or up to 24 hours).
  2. Grill chicken over medium-high heat for 6–7 minutes per side or until internal temperature reaches 165°F. Let rest 5 minutes, then slice.
  3. Warm black beans in a saucepan. If rice isn’t prepared, cook it and stir in 1 tbsp chipotle ranch seasoning for extra flavor.
  4. Warm tortillas for 15–20 seconds in microwave or dry skillet.
  5. Layer rice, beans, grilled chicken, cheese, sour cream, avocado, and pico de gallo on each tortilla. Sprinkle with cilantro.
  6. Fold in sides, roll tightly, and toast in a dry skillet if desired. Serve with lime wedges.

Notes

To meal prep: assemble ahead and refrigerate or freeze. For dairy-free, use plant-based cheese and yogurt. For extra crispness, toast the wrapped burritos on a skillet or in a panini press.
