- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 tablespoons chipotle ranch seasoning (store-bought or homemade)
- 4 large flour tortillas (10-inch)
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded Mexican-blend cheese
- 1/2 cup sour cream
- 1 avocado, sliced
- 1/2 cup pico de gallo
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Homemade Chipotle Ranch Seasoning:
- 2 tablespoons ranch seasoning mix
- 1 tablespoon chipotle powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
Instructions
- Mix olive oil and chipotle ranch seasoning in a bowl. Coat chicken thoroughly and marinate for 30 minutes (or up to 24 hours).
- Grill chicken over medium-high heat for 6–7 minutes per side or until internal temperature reaches 165°F. Let rest 5 minutes, then slice.
- Warm black beans in a saucepan. If rice isn’t prepared, cook it and stir in 1 tbsp chipotle ranch seasoning for extra flavor.
- Warm tortillas for 15–20 seconds in microwave or dry skillet.
- Layer rice, beans, grilled chicken, cheese, sour cream, avocado, and pico de gallo on each tortilla. Sprinkle with cilantro.
- Fold in sides, roll tightly, and toast in a dry skillet if desired. Serve with lime wedges.
