- 2 large chicken breasts (about 1.5 pounds total)
- ½ cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese, plus more for serving
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Kosher salt and black pepper to taste
- 1 cup marinara sauce
- 1 cup shredded low-moisture mozzarella cheese
- Olive oil spray or avocado oil spray
Instructions
- Prep the chicken by pounding to ½-inch thickness and patting dry with paper towels. Season with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko, Parmesan, Italian seasoning, and garlic powder mixed together.
- Dredge each chicken piece in flour, then egg, then press firmly into the panko-Parmesan mixture.
- Preheat air fryer to 375°F (190°C) for 3 minutes. Spray basket with oil and place breaded chicken in a single layer.
- Spray tops of chicken with oil and air fry for 10-12 minutes.
- Flip chicken, top with marinara sauce and mozzarella cheese, and air fry for another 2-4 minutes until cheese is melted and chicken reaches 165°F internally.
Notes
For best results, don’t overcrowd the air fryer basket. Cook in batches if needed. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the air fryer to maintain crispiness.
