Ingredients
- 2 packs (about 14 oz) fresh or frozen udon noodles
- 1 tablespoon neutral oil (like avocado or vegetable oil)
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 cup heavy cream (or coconut cream for dairy-free)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon oyster sauce (or vegetarian oyster sauce)
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- Optional toppings: sliced green onions, toasted sesame seeds, chili flakes
Instructions
- Cook the Udon Noodles: Bring a pot of water to a boil and cook the udon noodles according to package directions—usually about 3–4 minutes for fresh udon. Drain and rinse briefly with cool water to stop the cooking.
- Prepare the Creamy Sauce: While the noodles cook, heat oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant. Pour in the heavy cream, soy sauce, oyster sauce, and rice vinegar. Stir gently and let it simmer for 2–3 minutes until the sauce thickens slightly.
- Combine Noodles and Sauce: Add the cooked udon noodles to the skillet, along with the sesame oil. Toss everything together until the noodles are evenly coated in that luscious, creamy sauce. Let it warm through for another minute.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of water or broth to loosen the sauce. I don’t recommend freezing, as the creamy sauce can separate upon thawing.
