- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small yellow onion, finely chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 tablespoon unsalted butter (optional, for finishing)
Instructions
- Season both sides of the chicken breasts generously with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 5–7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3–4 minutes. Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic—it can turn bitter if overcooked.
- Reduce the heat to medium and pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and bring the mixture to a gentle simmer. Add the fresh spinach in batches, stirring until wilted. Sprinkle in the Parmesan cheese and stir until the sauce is smooth and creamy.
- Return the chicken to the skillet, spooning the sauce over the top. Let everything heat through for 2–3 minutes. For an extra glossy finish, stir in a tablespoon of butter just before serving.
Notes
For a lighter version, use Greek yogurt or light coconut milk instead of heavy cream. If using frozen spinach, thaw and squeeze out excess moisture before adding. Freshly grated Parmesan melts better than pre-shredded. Store leftovers in an airtight container in the refrigerator for up to 3 days.
