  • 2 pounds russet potatoes, cut into 1-inch cubes
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix (1 oz)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Fresh chives or green onions for garnish (optional)

Instructions

  1. Cut potatoes into 1-inch cubes. Slice sausage into rounds, dice onion, and mince garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage and brown for 2-3 minutes. Add onion and cook 3-4 more minutes until translucent. Add garlic and sauté for 30 seconds.
  3. Add potatoes, stir to coat. Pour in chicken broth, sprinkle with ranch mix, paprika, and pepper. Stir to combine.
  4. Bring to a simmer, cover, and cook 12–15 minutes, stirring occasionally, until potatoes are fork-tender.
  5. Stir in cream and butter. Add 1½ cups of cheese and mix until melted. Adjust consistency with more broth or cream if needed.
  6. Top with remaining cheese and cover until melted (or broil for 1–2 minutes). Garnish with chives or green onions if desired.

Notes

Try swapping in turkey sausage for a lighter version, or using Monterey Jack cheese for a twist. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
