  2. In a large bowl, mix soy sauce, Worcestershire, brown sugar, paprika, pepper, garlic powder, onion powder, red pepper flakes, liquid smoke, and curing salt (if using). Whisk until sugar dissolves.
  3. Add sliced beef to marinade, ensuring all pieces are coated. Cover and refrigerate for 3–24 hours, stirring occasionally for even marinating.
  4. Remove beef, pat dry with paper towels to remove excess moisture.
  5. Dehydrator method: Lay strips on dehydrator trays, leaving space. Set to 160°F and dry for 4–6 hours until jerky bends and cracks but doesn’t break.
  6. Oven method: Preheat oven to 170°F or lowest setting. Place strips on wire racks over foil-lined pans. Prop oven door open slightly. Bake 4–6 hours, rotating trays as needed.
