Description

These Bang Bang Chicken Skewers are fun, flavorful, and surprisingly simple to pull off. Tender chicken pieces are coated in a creamy, spicy, and slightly sweet sauce that delivers an explosive flavor experience perfect for grilling or baking.

  • For the Chicken Skewers:
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes beforehand)
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 12 tablespoons Sriracha or similar hot sauce (adjust to your heat preference)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced

Instructions

  1. Prepare the Chicken and Skewers: If using bamboo skewers, soak them in water for at least 30 minutes. Cut chicken into uniform 1-inch cubes. Toss chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Thread seasoned chicken onto skewers, leaving space between pieces.
  2. Make the Legendary Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and minced garlic. Taste and adjust heat or sweetness to your liking. Set half of the sauce aside for serving.
  3. Cook Your Skewers: For grilling: Preheat grill to medium-high heat (400°F/200°C). Grill skewers for 5-6 minutes per side until cooked through with grill marks. Brush with sauce during last minute. For baking: Preheat oven to 400°F (200°C). Bake skewers on lined baking sheet for 15-18 minutes, flipping halfway. Brush with sauce during last few minutes.

Notes

For a lighter sauce, swap mayonnaise for Greek yogurt. Apply sauce only during the last few minutes of cooking to prevent burning. Soak bamboo skewers to prevent burning. Store leftovers in refrigerator for up to 3 days.
